Lunch in a Ball Jar

So easy and great to take to the office to have a healthy, vegetarian lunch!

Can be done with the recipe below or any combination you want. Just remember: dressing at the bottom-lettuce at the top. Make sure the two do not touch so your salad stays crisp and fresh.    :)

Ingredients:
1 cup cooked quinoa
2 big handfuls of spinach
1 cup mushrooms
1 cup cherry tomatoes
1/2 red onion
4 tbsp balsamic vinagrette

Layer the ingredients in the jar as follows:
dressing
onion
mushrooms
tomatoes
quinoa
spinach








Breakfast in a Ball Jar



























I love these recipes!! So easy to make and tastes amazing-think summer porridge. I have been making them on Sunday and then eating them throughout the week for a healthy, easy breakfast. You can also slip in some extra goodness: flax seed oil, folic acid powder, chia seeds ect.....and no one will ever know (not even your kids)    


Ingredients:

  • 1/4 cup uncooked old fashioned oats
  • 1/3 cup skim milk
  • 1/4 cup low-fat Greek yogurt
  • 1/4 teaspoon almond/vanilla extract
  • 1 teaspoon honey, optional (or substitute any preferred sweetener)
  • any diced fruit combination you want

Directions:
In a half pint jar or container, add oats, milk, yogurt, almond extract and honey. Put lid on jar and shake until well combined. Add fruit and stir with fork until mixed throughout. Return lid to jar and refrigerate overnight or up to 2 days. Eat chilled.

  • Mango Almond 
  • Strawberry & Honey
  • Blueberry and Maple Syrup
  • Apple Cinnamon
  • Raspberry Vanilla
